Pearl Couscous is originally known as Ptitim, a type of toasted pasta shaped like rice grains, little balls, or multiple other shapes developed in Israel in the 1950s when rice was scarce. Outside Israel, it is typically marketed as Pearl couscous.

It is known to be similar to Pasta, However, the ptitim grains are pre-baked or toasted to give them their chewy texture and nutty flavour.
